Before anything, we have to ask one question: which type of pork ribs should we buy for this slow cooker ribs recipe?
I know how confusing it is to pick a pack of ribs among an array of pork ribs. Here is a brief introduction of popular types of ribs for you.
In a nutshell, there are 2 main types of cuts according to different body parts of pig. The cuts from the top of the rib cage are called "Baby Back Ribs". Other cuts from the belly side of the rib cage are called "Spare Ribs". Let's see the differences in detail !
A. Baby Back Ribs
These are named "baby" because they are shorter in size when compared to spare ribs. Nothing related to piggies! And "back" refers to the fact that they are connected to the pigs' backbone just beneath the loin muscle. So they are also called "loin ribs".
These ribs are a bit curved at the portion where they meet the spine. Baby back ribs are way more meaty and tender than spare ribs, which is why they are more expensive than spare ribs.
One rack of baby back ribs contains enough meat to feed one adult (but you will need more if you are crazy about ribs!).

B. Spare Ribs
Unlike baby back ribs, spare ribs are from the lower side of pigs where the breastbone is nearby. And so they are also known as "side ribs".

C. St. Louis Ribs & Rib Tips
Other than baby back ribs and spare ribs, you can see more unfamiliar names of ribs in supermarkets or butcher shops. St. Louis-style ribs are basically spare ribs and in rectangular shape. It's the upper part of trimmed spare ribs while the rest is called "rib tips".
For me, I prefer baby back ribs for slow cooker recipes. Because a smaller amount of fat could avoid too much grease accumulating in your slow cooker after a prolonged cooking process. But it totally depends on personal preference.

- 3 racks Ribs (around 3 lbs)
Sauce
- As required BBQ sauce (see our recommendations in the above!)
- 1 tsp Worcestershire sauce
- 2 tbsp Brown sugar
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 2 tsp Black pepper
- 1 tsp Cayenne pepper (optional)
- 2 cups Coke (optional)

Mix all the ingredients for the sauce until it's smooth and clean. This step consumes all your time as brown sugar takes ages to get mixed with the rest of the ingredients.

Slather the mixture all over the ribs. Remember to keep some for the later step. Then place it in the slow cooker.

Add 2 cups (around 500 ml) of coke. This step is totally optional. The idea is to make ribs much more tender. If you skip this step, cover the ribs in sauce in order to keep it moist.

Set the time as 3 hours for high setting, or 7 hours for low setting.

Once they are done, take out the ribs from the slow cooker and place them in a baking dish. Baste the ribs with some mixed sauce and broil for 10 minutes. The skin of the ribs will become more crispy and mouthwatering.
